Oh, chicken soup… they call it food for the soul, If you’ve never made chicken soup from scratch before, I encourage you to try this simple recipe. 


This is the one nutrient rich food that anyone can afford to add!

It is an incredibly healthy and very inexpensive addition to any diet. 


I like to keep as many meals as I can to one pot. This recipe calls for boiling a whole chicken right in the stockpot. Everything else can be given a rough chop and thrown in. In fact, this recipe takes only 45 minutes. 

The secret to successful meal planning is planning ahead. Consider making a big batch ahead of time and freeze it to have on handy. 


Broth (or technically, stock) is a mineral-rich infusion made by boiling bones of healthy animals with vegetables, herbs. and spices. You’ll find a large stock pot of broth/stock simmering in the kitchen of almost every 5-star restaurant. 


It is also a powerful health tonic that you can easily add to your family’s diet.



In my house, we try to drink at least 1 cup per person, first thing in the morning per day as a health boost. It doesn't take much time, just bring out from the freezer aforetime to defreeze, pour out one cup and bring to warm, drink up. 
It's a good way to kick-start your day., a good alternative for those that find it difficult to have breakfast. 


That's a sample of cup measurement. 

Note : this shouldn't substitute your regular meal, except you want to use it to maintain a fast, as it contains sustainable nutrients, electrolytes and minerals. 


In times of illness, you can just drink broth until you start feeling better as it supports the body but is very easy to digest so the body’s energy can go to healing.


In cases of stomach bugs or vomiting, broth often calms the stomach very quickly and helps shorten the duration of the illness.


Broth is a traditional food that your grandmother likely made often (and if not, your great-grandmother definitely did). 


Many societies around the world still consume broth regularly as it is a cheap and highly nutrient dense food.


Broth is an excellent source of minerals and is known to boost the immune system, remember chicken soup of grandmothers when you are sick anyone?


Broth improves Digestion, also supports joints, hair growth, skin, and nail growth due to its high collagen content.


Broth is also helpful to have on hand when anyone in the family gets sick as it can be a soothing and immune boosting drink during illness, even if the person doesn’t feel like eating.



INGREDIENTS

1 full local chicken from a healthy source


1 gallon of water


2 balls of fresh tomatoes 


1 onion 


2 carrots


1 TBSP salt (optional) 


2 cloves of garlic 


2 ginger stalks 


1 bunch parsley 


Add other choices of herbs and spices to taste (optional) 


PROCEDURE 

- Put whole raw local chicken in the pot ( cut into pieces so they fit)


- Pour cool filtered water over the chicken 


- Rough chop and add the vegetables of choice, I use garlic, ginger, carrot, fresh tomatoes, onion and parsley to the pot.


- Add your choice of salt (table salt, pink salt, sea salt, pepper, spices, or herbs, if using.


- Now, bring the broth to a boil at high pressure to cook for 45mins. Strain the liquid to store. (Add water to the pot, Repeat the cooking process for another 45mins) 


- Again, strain your liquid and store.


- Remove from heat and let cool slightly.


- When all liquids cool enough, store in the fridge for up to 5 days, or freeze for later consumption.


Note : Chicken should be tasteless fiber. Vegetables should be flavorless mush.


If your meat and vegetables from the broth are not mushy and tasteless, then you can still repeat the process of  re-cooking. 


When making broth, you want every ingredient going into the pot to give up 100% of it’s essence to the water. 


Don't discard the mushy meat, you can use it to make vegetable sauce for the family.
